Ingredients
- For the Chicken Marinade:
500g (1.1 lbs) boneless chicken thighs or breasts, cut into bite-sized pieces
150g (½ cup) plain yogurt
1 tbsp lemon juice
1½ tsp ground cumin
1½ tsp garam masala
1 tsp ground turmeric
1 tsp chili powder
1 tsp salt
1 tbsp grated ginger
1 tbsp garlic paste (or minced garlic)
- For the Sauce:
2 tbsp butter
1 tbsp oil
1 medium onion, finely chopped
1 tbsp ginger, grated
1 tbsp garlic paste (or minced garlic)
1½ tsp ground cumin
1 tsp paprika
1 tsp garam masala
½ tsp chili powder (adjust to taste)
400g (14 oz) canned crushed tomatoes
200 ml (Âľ cup) heavy cream (or use half-and-half for lighter version)
1 tbsp sugar (optional, balances acidity)
Salt to taste
Fresh coriander/cilantro for garnish
Directions
- Marinate the Chicken
Combine all marinade ingredients in a bowl.
Add chicken, mix well to coat, and marinate for at least 30 minutes, or up to 8 hours in the fridge. - Cook the Chicken
Heat 1 tbsp oil in a pan over medium-high heat.
Add marinated chicken in batches and cook until browned (5–7 minutes). It doesn’t need to be fully cooked through. Remove and set aside. - Make the Sauce
In the same pan, melt 2 tbsp butter over medium heat.
Sauté onions until soft and golden (about 5–7 minutes).
Add garlic and ginger; cook for 1–2 minutes.
Add cumin, paprika, garam masala, and chili powder. Stir for 1 minute to release aroma.
Add crushed tomatoes. Simmer for 10 minutes, stirring occasionally.
Blend sauce if smoother texture is desired (optional).
Stir in cream and sugar (if using). Simmer for 5 more minutes.
Add chicken back to the pan. Simmer for another 10 minutes until chicken is cooked and sauce thickens. - Finish and Serve
Garnish with chopped cilantro.
Serve hot with naan, basmati rice, or roti.
